Corn Cooking Process

JC Ford Company manufactures and supplies complete systems for the processing of whole corn in to masa (nixtamalization) for use in corn tortilla, tortilla chip, corn chip and taco shell production. These system are available in traditional open vats with burners to fully automated systems are designed for uniform processing to provide corn masa with consistent and texture to produce the highest quality corn products.

Corn cooking (nixtamalization) process is as follows:

  • Boiling whole raw corn kernels in water and calcium hydroxide (lye)
  • Steeping (resting in water) for an extended period for moisture absorption
  • Washing to remove pericarp and excess calcium hydroxide
  • Mill into corn masa
